Seeds of Love

I am really late baking my Christmas cake this year. Last year, I was so organized that I had it baked before the end of September, but this year I bought most of the ingredients weeks ago, but just didn't have time to do anything with them.

I like to make my cake in plenty of time to allow it time to mature. I believe that fruit cake just gets better with age, especially when helped along with liberal doses of brandy!

There is something very reassuring about the ritual of soaking the fruit the night before, then measuring out and mixing the other ingredients and the spices together. How can thoughts not turn to Christmas when the air is filled with the scent of nutmeg, cinnamon and cloves?

The long, slow baking of a fruit cake with the anticipation of the pleasure to come ~ it is like sowing seeds of love.
